Granola Bark


Do you crave chocolate like my family does?!

 Dark chocolate with a high cocoa content is very nutritious! It is filled with fiber, iron, magnesium, copper and manganese.  For more reading about the benefits of chocolate, check out this article on the benefits!

For this recipe, I have paired dark chocolate with a combination of baked nuts, seeds, oats and dates for a thin crunchy granola bar. I covered the bar in dark chocolate and topped with flaky salt! 


Ingredients

 In food processor:
1  1/2 cup almonds (roast them first on 350 for 10 mins for extra flavor)
1/2 cup almond butter
1 cup dates
1 and 1/2 cups oats
2 Tbsp Hemp Seed Hearts

 After processing:
  2/3 cup honey
flaky salt

1 - 1 1/2 bags of @enjoylifefoods dark chocolate chips ( I like these because the first ingredient is chocolate).
 

1. In a food processor or blender, add almonds. Pulse them first for a few seconds until chopped.  Then add oats, dates and almond butter on top. Pulse until crumbs form.  Add 2-3 Tablespoons hemp seed hearts and pulse a few times more.

2. Pour this mixture in a bowl and honey.  

3. Press this sticky mixture onto a parchment covered 9x 13 tray. I suggest using a baking stone.  Pressing is made easier if you coat your hands with coconut oil or use a wooden pastry roller and coat with coconut oil.

4.  Set oven to 350 when ready to bake. Bake for 15-20 mins. I took mine out when I began to smell the almonds and honey after about 16 mins.

5. Let cool. As it cools, melt 1/2 bag of Dairy free dark chocolate chips by @enjoylifefoods with a generous teaspoon of coconut oil. After melted,  spread chocolate over the top of the granola bark and use a spatula to spread evenly.. Freeze for 30-45 mins.

6. Take frozen granola and flip it. Repeat chocolate melting and spread a layer of chocolate on the opposite side of the granola bark. Freeze for another 30-40 mins.

7. Take granola bark out of freezer and sprinkle flaky salt on top. Cut into pieces of granola bark and store in a hour favorite  container and keep in the fridge!
