White Bean Hummus

When you need a quick, tasty and healthy dip, this white bean hummus is it! The ingredients are simple and many you might already have in your pantry.

Why white beans? One cup of white beans provides your body with about 17 grams of protein, depending on the brand and how the beans are processed. White beans are also filled with fiber which is good for digestive health as well as heart health. They also have magnesium, zinc, iron, folate and potassium--just a few of the vitamins and minerals our bodies need.


To make this healthy hummus you will need:


1 can of organic white beans ( cannellini, great northern, navy all work)

1/4 cup of  organic tahini

1/4 cup of olive oil

juice of a large lemon

3/4 tsp of salt

1 and 1/2 tsp coriander

clove of  minced garlic (optional)

2-3 Tablespoons of Ice water (optional)


Directions:

1. Rinse and drain the can of beans.  Then soak the beans in a bowl of water while you prepare the other ingredients.

2. In a food processor, add 1/4 cup of organic tahini and the juice of a large lemon. Process for 20 secs until combined.

3. Add salt, coriander, minced garlic, and beans (drained from water they were soaking in). Process on high for a few seconds and slowly add olive oil.

4. If your beans still look lumpy, slowly add a tablespoon to start of ice water, this helps to thin out the dip and remove lumps. Too much water can impact the flavor too so start with a little.

5. Taste, add more salt if needed.

6. Eat right away or keep in a covered dish in the refrigerator.
